During roasting, CO₂ builds up inside the beans, and after roasting, they begin a process called degassing, where this gas escapes over time.
If you brew coffee too soon after roasting, excess CO₂ can interfere with the extraction process, causing:
• Uneven flavor extraction – CO₂ repels water, meaning your coffee grounds won’t absorb water properly, leading to an unbalanced brew.
• Harsh or sour notes – Because of the gas buildup, the coffee may taste sharp, acidic, or even slightly carbonated.
• Flat or inconsistent crema in espresso – If you’re making espresso, brewing too soon can cause excessive bubbling, leading to an unstable crema and weaker flavors.

• Light Roasts – These take longer to degas because the structure of the bean is denser. Waiting 7-10 days is ideal.
• Medium Roasts – Typically peak around 5-7 days, which is why our medium roast is at its best after a short resting period.
• Dark Roasts – These degas the fastest due to their more porous structure. You can usually start brewing after 3-5 days, but waiting a little longer can still improve balance.
